Mixed Green and Avocado Salad

Mixed Green and Avocado Salad

  • 2 Cups Mixed Green
  • Half Avocado
  • Greek Cheese
  • Handful of Chia Seeds
  • Italian Dressing
Mix all ingredient together and drizzle a little Italian dressing on top.

- There you have it. Super easy healthy salad for lunch.-

Chicken, Brown Rice and Zucchini Recipe

Slow Cooked Chicken, Brown Rice and Zucchini 

Trying to cook an easy healthy dinner and quiet don't know what. Here is a recipe that I put together the other night.

Ingredients:
  • 4 Chicken Breasts
    • Salt 
    • Pepper 
    • Red Pepper 
    • Garlic Powder
    •  1 lemon
  • Brown Rice
    • 1 cup brown rice
    • Chicken broth
    • Vegetable broth
    • Salt
    • Olive Oil
  • Zucchini
    • 4-5 Green and Yellow Zucchini
    • Salt
    • Pepper
    • Garlic Powder
    • Olive Oil

  1. Wash and season the chicken breasts with salt, pepper, red pepper and garlic powder.
  2. Put light oil on the bottom of the slow cooker so the chicken does not stick.... LIGHT OIL... and place the chicken breasts inside.
  3. Cover the chicken with lemon juice.
  4. Cover and cook on high for 3 hours.
* My husband thought the chicken was a bit dry so maybe if you like you can add some water to the slow cooker and don't cook for as long. Just keep checking to make sure the chicken is cooked all the way through and you don't see pink.

  1. Wash 1 cup of brown rice and put it in a small pot. Cook the brown rice for about 5 minutes as you stir and then add a tablespoon of olive oil.
  2. Add two cups of water.
  3. Add chicken and vegetable broth to your liking.
  4. Add salt and stir.
  5. Cook until the water boils. When the water boils lower the temperature and cover the lid.
  6. Keep checking on your rice as soon as there is no more water left. It's ready!

  1. Wash and cut the zucchini into small pieces.
  2. Heat the over to 400 degrees.
  3. Cover a baking sheet with foil.
  4. Place the zucchinis on the pan and season with salt, pepper, garlic powder and drizzle with olive oil.
  5. Bake for about 10-15 minutes.
*My husband always complains that I over the veggies. So make sure it comes out crispy and not soggy.... :)
