Healthy Chocolate Mousse

Chocolate Mousse



Ingredients

  • 2 avocados
  • 1 banana
  • 1/3 cup cocoa
  • 1/2 tsp cinnamon
  • 4 dates
  • Raspberries for topping
Directions
  1. Place the avocados, banana, cocoa, cinnamon and dates in food processor. 
  2. Place the mousse into a bowl and top with raspberries
  3. Refrigerator for about an hour or until set and chilled.

Kale and Monterey Jack Quesadillas

Kale & Monterey Jack Quesadillas

with Avocado, Radishes and Fried Eggs


Ingredients
  • 2 Farm Eggs
  • 4 Corn Tortillas
  • 6 ounces Monterey Jack Cheese
  • 1 Avocado
  • 1 Bunch Cilantro
  • 1 Bunch Kale
  • 1 Clove Garlic
  • 3 Ounces Radishes
  • 1 Lime
  • 1 Teaspoon Quesadilla Spice Blend
    • Ancho Chile Powder, Chipotle Chile Powder and Ground Cumin
  • 1/4 Cup Mexican Cream



Instructions
  1. Using a peeler, remove the rind of the lime, avoiding the white pith. Mince the rind to get 2 teaspoons of zest.
  2. Quarter the lime
  3. Peel and mince the garlic
  4. Remove and discard the kale stems. Roughly chop the leaves
  5. Grate the cheese
  6. Pit, peel and medium dice the avocado. Toss the avocado with the juice of 2 lime wedges in a bowl. Season with salt and pepper.
  7. Pick the cilantro leaves off the stems
  8. Cut off and discard the stem ends of the radishes. Cut the radish into thin matchsticks and place in a bowl of ice water.
  9. In a bowl, combine the cream and the juice of the remaining lime wedges. Season with salt and pepper to taste.
  10. In a large pan heat 2 teaspoons of olive oil on medium until hot. Add garlic. cook for 30 seconds to 1 minutes stirring frequently. 
  11. Add kale, 1/4 cup of water and spice blend to the large pan. Stirring frequently for 2 to 4 minutes.
  12. Add the lime zest to the pan and cook for additional 30 seconds to 1 minute. Season with salt and pepper to taste.
  13. Place the tortillas on a clean, dry work surface. Divide the cheese and cooked kale between 2 of the tortillas. Top with the remaining tortillas.
  14. Add 2 teaspoons of olive oil to a clean pan on medium -high heat until hot. Add the quesadillas and cook for 2 to 3 minutes per side. Remove the cooked quesadillas and place in clean serving plates.
  15. In the same pan heat 2 teaspoons of olive oil on medium until hot. Crack the eggs. Keeping them separated. Season with salt and pepper. Cook for 1 to 3 minutes or until the whites are set and the yolks are cooked to your desire.
  16. Top each cooked quesadilla with a fried egg. Season with salt and pepper. Garnish with the seasoned avocado, lime crema, radishes and enjoy.

Sweet Spinach Smoothie

This spinach smoothie from trainer Harley Pasternak is a favorite. Do not be scared of the green color, this smoothie is sweet. 

Spinach is the main ingredient in this smoothie. In just one serving you will be getting your entire recommended dietary allowance of vitamin A (Vitamin A is great for healthy skin, hair and eyes) and bone-building vitamin K, as well as an impressive amount of essential nutrients like manganese, potassium, and vitamin C. This smoothie is also a good source of protein, making this veggie packed smoothie a smart breakfast choice.


Harley Pasternak Spinach Smoothie Recipe



Ingredients

  • 2 cups spinach leaves
  • 1 ripe pear, peeled, cored, and chopped
  • 15 green or red grapes
  • 6 ounces fat-free plain Greek yogurt
  • 2 tablespoons chopped avocado
  • 2 tablespoons fresh lime juice
Directions

In a blender or food processor, combine all the ingredients until blended to the desired consistency.

Breakfast - Snack Idea ... Peanut Butter Banana Quesadilla




Ingredients
  • 1 8-inch whole wheat tortilla
  • 2 Tbsp natural peanut butter
  • ½ medium banana
  • 1 Tbsp semi-sweet chocolate chips
Instructions
  1. Spread the peanut butter over the surface of the tortilla.
  2. Slice the banana very thinly and then arrange the slices over half of the tortilla. Sprinkle the chocolate chips over the banana slices and then fold the tortilla in half. (I didn't have chocolate chips so I used white-chocolate chips)
  3. Cook the quesadilla in a skillet over medium-low heat until golden brown and crispy on both sides.
Enjoy with a glass of milk....

Simple Egg Sandwich Breakfast

Don't know what to eat in the morning before work, that's fast and healthy? You can try out this egg sandwich that's super easy to do and very healthy.



Ingredients

  • Toast of your choice
  • 1/4 of a tomato, sliced (can be done the night before)
  • hard boiled egg (which can be boiled the night before)
  • Salt and Pepper, to taste

Directions

  1. Toast bread
  2. Peel egg
  3. Slice tomato in thin slices and place on the toast fallowed by the egg
  4. Season with salt and pepper and can garnish with mint if you choice
  5. ENJOY!

Apple Cinnamon Oatmeal Protein Pancakes

Apple Cinnamon Oatmeal Protein PanCakes



Ingredients:
  • 1.5 cups oats
  • 1 large apple- shredded with cheese grater
  • 1 banana - mashed with fork
  • .5 cup milk (I used soy milk)
  • 2 eggs- whisked (I used only egg whites)
  • 2 scoops protein powder (I used only 1 scoop of chocolate but vanilla will be great too)
  • 2 tablespoons flax seed meal
  • 1 tablespoon cinnamon
  • 1 teaspoon baking powder
  • .5 teaspoon nutmeg
  • .25 teaspoon salt
  • pure maple syrup, apple and banana to serve
Instructions:
  1. Combine all ingredients in a medium bowl and mix. (I just mixed with my fork to break everything down)
  2. Heat a non-stick saute pan over medium-high heat. Spray with none-stick spray once hot.
  3. Pour pancakes on to griddle, 1/4 cup at a time, and cook until first side is browned- about 2-3 minutes. Flip and cook additional 2-3 minutes or until second side is browned. (This mixer is thick so what I did was when I poured it in the pan I used my fork to flatten the pancakes and give it a shape)
  4. Continue working in batches until all the pancake batter is gone.
  5. Serve with pure maple syrup and top with apples or bananas.
Notes: Might look like a veggie burger as my husband and brother called it but it tastes amazing, they were impressed. You can also not include the protein powder if you are just looking for a healthier pancake then the sugary box one.
